Ingredients
For the Noodles:
- 8 oz noodles (your choice)
- 1 lb beef flank steak or sirloin, thinly sliced
- 2 tbsp vegetable oil
- ½ onion, thinly sliced
- 2 bell peppers (any color), sliced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
For the Szechuan Sauce:
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp hoisin sauce
- 1 tbsp chili paste or Szechuan peppercorn paste
- 1 tsp sugar
- 1 tbsp sesame oil
- ½ tsp crushed red pepper flakes (optional for extra heat)
Instructions
- Prepare the Noodles: Cook the noodles according to the package instructions. Drain and set aside.
- Make the Szechuan Sauce: In a small bowl, whisk together all the sauce ingredients. Set aside.
- Cook the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and stir-fry until browned, about 5-6 minutes. Remove from the pan and set aside.
- Stir-Fry the Vegetables: In the same pan, add the onion, bell peppers, garlic, and ginger. Stir-fry for 3-4 minutes until softened.
- Combine Everything: Return the cooked beef to the pan and add the noodles. Pour the Szechuan sauce over everything and toss to coat evenly.
- Finish Cooking: Stir-fry for an additional 2-3 minutes until the sauce thickens slightly. Taste and adjust with more soy sauce or chili paste if desired.
- Serve & Enjoy: Plate the noodles hot and garnish with green onions or sesame seeds for extra flavor.
