Easy Pepperoni Pizza Muffins

Ingredients:

  • Cooking spray
  • 1 (10-ounce) can refrigerated buttermilk biscuit dough
  • 10 tablespoons pizza sauce (e.g., Ragu Homestyle)
  • 10 slices of pepperoni
  • 10 tablespoons shredded mozzarella cheese (adjust to taste)

Instructions:

  1. Preheat the Oven
Set your oven to 425°F (220°C). Lightly grease a 10-cup muffin tin with cooking spray to prevent sticking.
  2. Prepare the Dough
Take each biscuit and flatten it gently between your hands. Press the dough into the muffin cups, ensuring it covers the bottom and extends slightly up the sides. Let the dough rest for about 5 minutes to rise slightly. If needed, press it gently into place.
  3. Assemble the Pizza Muffins
Add 1 tablespoon of pizza sauce to each cup. Place a slice of pepperoni on top, then sprinkle 1 tablespoon of shredded mozzarella over it. Feel free to add a little extra cheese if desired.
  4. Bake
Place the muffin tin in the preheated oven and bake for about 10 minutes, or until the edges of the dough are lightly golden and the cheese is bubbly and melted.
  5. Cool and Serve
Remove the pizza muffins from the tin and transfer them to a wire rack to cool for about 5 minutes. Serve warm and enjoy!

These mini pizza muffins are a quick and delightful snack, perfect for parties or a fun twist on pizza night!
