Ingredients:
- 2 tablespoons unsalted butter
- 2 tablespoons vegetable oil
- 2 large yellow onions (about 1¾ lbs), thinly sliced
- ½ teaspoon kosher salt (plus more to taste)
- ½ cup (4 oz) cream cheese, softened
- ½ cup (4 oz) sour cream
- ⅓ cup mayonnaise
- Freshly ground black pepper, to taste
- 2 tablespoons sliced chives
- Potato chips (such as Ruffles) for serving
Instructions:
- Caramelize the Onions:
In a large skillet over medium heat, melt the butter. Add the vegetable oil and swirl to combine. Stir in the sliced onions and ½ teaspoon of salt. Cook, stirring occasionally, until the onions begin to soften and break down, about 10 to 12 minutes.Reduce the heat to medium-low and continue cooking, stirring occasionally, until the onions turn golden brown and deeply caramelized—this will take 40 to 55 minutes. Once caramelized, transfer the onions to a bowl and allow them to cool completely. - Prepare the Dip:
Once the onions are cooled, mix in the softened cream cheese, sour cream, and mayonnaise. Stir until smooth and well combined. Season with additional salt and freshly ground black pepper to taste. - Garnish and Serve:
Sprinkle the dip with freshly sliced chives. Serve with crispy potato chips for dipping.
