- 3 large ripe bananas, mashed
- ¾ cup granulated sugar
- 1 egg, lightly beaten
- ⅓ cup butter, melted
- ½ teaspoon vanilla extract
- ¾ cup chocolate chips
Instructions:
- Prepare the Oven: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or line it with paper liners.
- Combine Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Mix Wet Ingredients: In a separate large bowl, mash the bananas, then stir in the sugar, beaten egg, melted butter, and vanilla extract. Mix until just blended—avoid overmixing to keep the batter light.
- Combine Wet and Dry: Gradually fold the dry ingredients into the wet mixture using a spatula until just incorporated. Be careful not to overwork the batter. Gently fold in the chocolate chips.
- Fill the Muffin Tin: Spoon the batter into the prepared muffin cups, filling each about ¾ full.
- Bake: Place the tin in the preheated oven and bake for 25–30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool and Serve: Let the muffins cool in the tin for about 5–10 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
