Baked feta eggs

Ingredients:

  • 1 (8-ounce) block feta cheese
  • 12 large eggs
  • 2 tablespoons extra virgin olive oil, plus extra for greasing
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pita pockets, for serving
  • Fresh basil and/or mint, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). Lightly grease an 8×11-inch baking dish with olive oil.
  2. Place the block of feta cheese in the center of the dish. Crack the eggs around the feta, ensuring even distribution.
  3. Drizzle the olive oil over the eggs and feta, then sprinkle the eggs with salt. Add a touch of black pepper over both the eggs and feta for seasoning.
  4. Bake for 18-22 minutes, or until the feta softens and the egg whites around the edges are set.
  5. Once out of the oven, use a fork to gently scramble the eggs and feta together. It’s okay if some of the egg whites appear slightly underdone—they’ll continue cooking from the residual heat.
  6. Serve as is or spoon the mixture into warm pita pockets. Top with fresh basil or mint for an herby finish. Enjoy!
