Ingredients:
- 1 (8-ounce) block feta cheese
- 12 large eggs
- 2 tablespoons extra virgin olive oil, plus extra for greasing
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Pita pockets, for serving
- Fresh basil and/or mint, for garnish
Instructions:
- Preheat your oven to 400°F (200°C). Lightly grease an 8×11-inch baking dish with olive oil.
- Place the block of feta cheese in the center of the dish. Crack the eggs around the feta, ensuring even distribution.
- Drizzle the olive oil over the eggs and feta, then sprinkle the eggs with salt. Add a touch of black pepper over both the eggs and feta for seasoning.
- Bake for 18-22 minutes, or until the feta softens and the egg whites around the edges are set.
- Once out of the oven, use a fork to gently scramble the eggs and feta together. It’s okay if some of the egg whites appear slightly underdone—they’ll continue cooking from the residual heat.
- Serve as is or spoon the mixture into warm pita pockets. Top with fresh basil or mint for an herby finish. Enjoy!
