Banana chocolate chip muffins

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large ripe bananas, mashed
  • ¾ cup granulated sugar
  • 1 egg, lightly beaten
  • ⅓ cup butter, melted
  • ½ teaspoon vanilla extract
  • ¾ cup chocolate chips

Instructions:

  1. Prepare the Oven: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or line it with paper liners.
  2. Combine Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Mix Wet Ingredients: In a separate large bowl, mash the bananas, then stir in the sugar, beaten egg, melted butter, and vanilla extract. Mix until just blended—avoid overmixing to keep the batter light.
  4. Combine Wet and Dry: Gradually fold the dry ingredients into the wet mixture using a spatula until just incorporated. Be careful not to overwork the batter. Gently fold in the chocolate chips.
  5. Fill the Muffin Tin: Spoon the batter into the prepared muffin cups, filling each about ¾ full.
  6. Bake: Place the tin in the preheated oven and bake for 25–30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool and Serve: Let the muffins cool in the tin for about 5–10 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
