Ingredients

  • ½ pound ground chicken
  • ½ pound lean ground beef
  • ½ cup finely minced onion
  • 1 (28-ounce) can crushed tomatoes
  • 1 (8-ounce) can tomato sauce
  • 2 tablespoons fresh parsley, finely chopped (divided)

  • 1 ½ teaspoons dried basil
  • 1 ½ teaspoons salt
  • ½ teaspoon dried oregano
  • ⅛ teaspoon white sugar
  • 1 (16-ounce) package lasagna noodles
  • 1 pound small-curd cottage cheese
  • ¾ cup grated Parmesan cheese
  • 3 large eggs
  • 2 teaspoons salt
  • ¼ teaspoon ground black pepper
  • 1 (16-ounce) package shredded mozzarella cheese

Instructions

  1. Cook the Meat Sauce:
    In a large skillet over medium-high heat, brown the ground chicken and beef together until fully cooked and crumbled (about 5-7 minutes). Add the minced onion and sauté until softened (approximately 5 minutes). Stir in crushed tomatoes, tomato sauce, 1 tablespoon of parsley, garlic, basil, salt, oregano, and sugar. Lower the heat to medium-low and let the sauce simmer gently for 30 minutes, stirring occasionally.
  2. Prepare the Pasta:
    Bring a large pot of salted water to a boil. Cook the lasagna noodles until al dente (8-10 minutes), stirring occasionally to prevent sticking. Drain the noodles and set aside.
  3. Make the Cheese Mixture:
    While the sauce simmers, preheat the oven to 375°F (190°C). In a mixing bowl, combine the cottage cheese, Parmesan cheese, eggs, the remaining 1 tablespoon of parsley, salt, and pepper. Mix well and set aside.
  4. Assemble the Lasagna:
    Spread a thin layer of the meat sauce over the bottom of a 9×13-inch baking dish. Lay down a layer of noodles, ensuring they cover the sauce. Spread half of the cheese mixture over the noodles, followed by half of the remaining sauce and half of the mozzarella cheese. Repeat the layers: noodles, cheese mixture, sauce, and mozzarella. Cover the dish tightly with aluminum foil.
  5. Bake to Perfection:
    Bake the lasagna in the preheated oven for 30-40 minutes. Remove the foil and continue baking for another 5-10 minutes, until the cheese on top is melted and golden.
  6. Rest and Serve:
    Let the lasagna rest for about 10 minutes after removing it from the oven. Slice into portions and serve hot for a hearty, comforting meal.
