Instructions:
- Prepare the Baking Sheet:
Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and lightly brush it with vegetable oil. - Combine Ingredients:
In a medium mixing bowl, blend the softened butter, Cheddar cheese, Parmesan cheese, paprika, cayenne pepper, and salt. Use the back of a spatula to mix until smooth and well incorporated. - Form the Dough:
Gradually add the flour to the cheese mixture, stirring with a fork until it forms a crumbly texture. Add cold water, a few drops at a time, mixing gently with a spatula until the dough holds together when pressed. - Chill the Dough:
Shape the dough into a thick disk, wrap it tightly in plastic wrap, and refrigerate for about 30 minutes to firm up. - Roll and Cut:
On a floured surface, roll the chilled dough out to about ⅛-inch thickness. Use a pizza cutter to slice the dough into 1-inch wide strips, then cut crosswise into rectangles roughly 1½ inches long. To give the crackers their signature look, use the back of a bamboo skewer to poke 5 small holes in each piece. - Bake to Perfection:
Arrange the crackers on the prepared baking sheet, leaving a little space between each. Bake for about 15 minutes, or until they turn golden brown and crisp. - Cool and Serve:
Let the crackers cool on the baking sheet for 3 minutes before gently releasing them from the foil. Allow them to cool completely on a wire rack.
