Burrito with Potatoes and Chorizo

  • 12 ounces of crumbled Mexican chorizo
  • 1 medium onion, finely chopped
  • 2 large potatoes, peeled and diced into small cubes

  • 1 garlic clove, minced
  • 8 warm flour tortillas

Instructions:

  1. Heat a large skillet over medium heat. Add the crumbled chorizo and chopped onion. Cook, stirring frequently, until the onion becomes soft and translucent, about 5 minutes.
  2. Stir in the diced potatoes, water, and minced garlic. Mix everything thoroughly.
  3. Reduce the heat to medium-low, cover the skillet, and cook the mixture for approximately 25 minutes, stirring every 10 minutes, until the potatoes are tender.
