🔪 Instructions
1️⃣ Prepare the Lobster Filling:
- In a mixing bowl, combine the chopped lobster meat, cream cheese, mayonnaise, garlic powder, onion powder, Old Bay seasoning, and parsley.
- Stir in the shredded mozzarella and Parmesan cheese until well mixed.
2️⃣ Stuff the Chicken:
- Using a sharp knife, carefully cut a pocket into each chicken breast without slicing all the way through.
- Evenly distribute the lobster mixture, stuffing it inside each chicken breast. Secure with toothpicks if necessary.
3️⃣ Sear & Bake:
- Preheat the oven to 375°F (190°C).
- Heat 1 tablespoon of butter in a skillet over medium-high heat.
- Sear the chicken on both sides until golden brown (2-3 minutes per side).
- Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
4️⃣ Make the Creamy Sauce:
- In the same skillet, melt 1 tablespoon of butter.
- Stir in the heavy cream, chicken broth, Dijon mustard, garlic powder, and paprika.
- Simmer for 5 minutes, then whisk in the shredded mozzarella cheese until the sauce becomes smooth and creamy.
5️⃣ Assemble & Serve:
- Remove the chicken from the oven and spoon the creamy sauce over the top.
- Sprinkle additional mozzarella or Gruyère cheese over the chicken and broil for 2-3 minutes until melted and bubbly.
- Garnish with fresh parsley and serve hot.
