For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup cooked lobster meat, chopped

  • ½ teaspoon Old Bay seasoning
  • 1 tablespoon fresh parsley, chopped

For the Creamy Sauce:

  • 1 tablespoon butter
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ½ cup shredded mozzarella cheese
  • Salt & pepper to taste

🔪 Instructions

1️⃣ Prepare the Lobster Filling:

  1. In a mixing bowl, combine the chopped lobster meat, cream cheese, mayonnaise, garlic powder, onion powder, Old Bay seasoning, and parsley.
  2. Stir in the shredded mozzarella and Parmesan cheese until well mixed.

2️⃣ Stuff the Chicken:

  1. Using a sharp knife, carefully cut a pocket into each chicken breast without slicing all the way through.
  2. Evenly distribute the lobster mixture, stuffing it inside each chicken breast. Secure with toothpicks if necessary.

3️⃣ Sear & Bake:

  1. Preheat the oven to 375°F (190°C).
  2. Heat 1 tablespoon of butter in a skillet over medium-high heat.
  3. Sear the chicken on both sides until golden brown (2-3 minutes per side).
  4. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

4️⃣ Make the Creamy Sauce:

  1. In the same skillet, melt 1 tablespoon of butter.
  2. Stir in the heavy cream, chicken broth, Dijon mustard, garlic powder, and paprika.
  3. Simmer for 5 minutes, then whisk in the shredded mozzarella cheese until the sauce becomes smooth and creamy.

5️⃣ Assemble & Serve:

  1. Remove the chicken from the oven and spoon the creamy sauce over the top.
  2. Sprinkle additional mozzarella or Gruyère cheese over the chicken and broil for 2-3 minutes until melted and bubbly.
  3. Garnish with fresh parsley and serve hot.
